What is cheese

Cheese is a concentrated dairy product made by coagulating milk proteins (casein) and separating the curds from the whey. Cow, sheep, goat, and buffalo milk are the main sources.   3. Coagulation — add rennet (chymosin) which precipitates casein; gel forms in 30-60 minutes.
  4. Curd cutting and cooking — cut gel to cubes, heat to 35-55°C depending on target type; expels whey and firms curds.
  5. Draining and molding — separate curds from whey; press into forms under 0.5-5 bar pressure depending on final style.
  6. Salting — brine immersion (6-24 hours) or dry rubbing; controls moisture, microbes, and flavor.
  7. Aging — controlled humidity (80-95%) and temperature (4-15°C) for weeks to years; enzymes develop flavor and texture.

Common mistakes when working with cheese

  • ⚠️ Serving straight from refrigerator — cold cheese masks flavor and aroma; rest 30-60 minutes at room temperature for tasting.
  • Pre-grated cheese for melting — contains anti-caking agents (cellulose, potato starch) that prevent smooth melt; grate fresh.
  • Wrong cheese for melting — parmesan grates over pasta but doesn’t flow in sauces; use mozzarella, cheddar, or fontina for melted applications.
  • Wrapping in plastic long-term — traps moisture and ammonia; use cheese paper or waxed paper for breathing.

Why does my cheese sauce turn grainy?

Overheating breaks the casein-fat emulsion. Keep sauce below 85°C, add cheese off the heat, use a little starch or sodium citrate as stabilizer for smooth flow.

Can you freeze cheese?

Possible but texture suffers. Hard cheeses freeze better than soft. Use frozen cheese for cooking (sauces, pizza, casseroles) rather than eating fresh. Shelf life frozen: 2-6 months depending on type.
