It is extracted from red seaweed species (Phyllophora, Gracilaria, Gelidium, Ceramium, and others) or brown seaweed (Ahnfeltia, Furcellaria). Technologically, <a href=\"\/key-words\/agar\/\">agar<\/a> functions as a <a href=\"\/key-words\/thickener\/\">thickener<\/a>, hydrocolloid, and gelling agent.<\/p>\n<h2>Chemical composition<\/h2>\n<p>Agar raw material contains approximately 1.5\u20134% mineral salts, 1\u20132% protein and nitrogenous substances, 10\u201320% water, and 70\u201380% carbohydrates (primarily polysaccharides). The polysaccharide fraction includes D- and L-galactose, 3,6-anhydrogalactose, pentoses, D-glucuronic acid, and pyruvic acid. Two key fractions \u2014 agarose (responsible for gelling) and agaropectin \u2014 can be extracted from agar.<\/p>\n<h2>Physical and chemical properties<\/h2>\n<p>Agar appears as a yellowish-white powder or flakes. Below 35\u201340 \u00b0C, it does not dissolve in water. Above 40 \u00b0C, it begins to swell and partially dissolve. At 90\u2013100 \u00b0C, it dissolves completely. Upon cooling to 35\u201340 \u00b0C, the solution transforms into a firm, elastic gel. This thermoreversible behavior \u2014 dissolving when heated and gelling when cooled \u2014 is the foundation of all agar applications in food production.<\/p>\n<p>Agar is one of the strongest gelling substances available. Its gel strength is measured in conventional units, with the most popular commercial grades being 900, 1000, and 1100. Unlike <a href=\"\/key-words\/pectin\/\">pectin<\/a> and <a href=\"\/key-words\/gelatin\/\">gelatin<\/a>, agar begins to form a gel at concentrations as low as 0.3\u20130.5%.
