The dough is mixed longer to develop gluten, then laminated (sheeted and folded multiple times) to create the characteristic layered structure. Dough temperature is typically 28\u201332 \u00b0C \u2014 higher than for sugar cookies. Baking temperature is 220\u2013250 \u00b0C for 5\u20137 minutes. Final moisture content is typically 5.5\u20138.0%.
